SPINACH STUFFED PEPPERS | |
1 bunch spinach or 1 (10 oz.) pkg. frozen spinach, thawed and drained well 1/2 bunch celery 1 lg. onion 1/4 lb. sharp Cheddar cheese 3 eggs, beaten well 1 tsp. salt 1/4 c. olive oil 1/2 to 1 c. bread crumbs 6 green peppers Wash and clean spinach. Clean celery and onions. Grind spinach, celery, onion, cheese and mix well. Beat eggs, add to spinach mixture. Add salt, olive oil and bread crumbs. If too thin, add more crumbs. Clean peppers, cut into quarters. Parboil peppers for 2 minutes. Drain. Place on cookie sheet, lightly salt and fill with spinach mixture. Bake at 325 degrees for 1 hour. These can be frozen before baking and then removed from freezer as needed. Freeze on cookie sheet and then store in plastic bags to keep from sticking together. Serves 12. |
