SPINACH PIE 
1 pkg. frozen chopped spinach
1 sm. brick Munster cheese
2 eggs
1/2 c. Parmesan cheese
Bread crumbs

Defrost spinach, drain, rinse, squeeze out excess water in a paper towel. Grate munster cheese in food processor. Add to dried off spinach, mix. Add 2 beaten eggs and Parmesan cheese. Add bread crumbs to firm up mixture. Place in a greased (use Pam) souffle or casserole dish. Sprinkle a layer of bread crumbs on top. Bake in a 350 degree oven for 30 minutes.

You can also use chopped broccoli instead of spinach.
