PEANUT BUTTER CUPCAKES 
1 3/4 c. flour
1 c. milk
3/4 c. sugar
1/2 c. peanut butter
1/4 c. shortening
1 tbsp. baking powder
3/4 tsp. vanilla
1/2 tsp. salt
2 lg. eggs

Preheat oven to 350 degrees. Grease muffin pans or use cupcake papers. Into a large bowl measure all ingredients. Using mixer, beat ingredients at low speed until blended. Increase speed to high and beat for 2 minutes. Spoon batter into pans and bake for 18-20 minutes. Cool before frosting. Use vanilla frosting or chocolate frosting. Makes 2 dozen cupcakes. This recipe can be doubled, and the remaining cupcakes can be frozen.
