EDUCATED RED BEETS 
1 lg. can (or 2 1/2 c. cooked) beets
1 tbsp. cornstarch
1/4 c. water
1/4 c. vinegar
1/4 c. sugar
1 tbsp. butter
Salt & pepper to taste

Mix sugar and cornstarch; add water and vinegar. Boil 5 minutes. Drain beets; add to mixture. Cook slowly, stirring occasionally until beets are heated. Add butter, salt and pepper. Allow to set 5 minutes before serving.
