RED BEET SALAD 
1 can cut or sliced beets
2 hard boiled eggs, shelled
1 stalk celery, diced
1/2 c. vinegar
1 tbsp. sugar
1/4 c. mayonnaise or Miracle Whip
Salt and pepper to taste

Mix vinegar, sugar, salt and pepper. Add to beets with juice and eggs. Marinate for 2-3 hours. Pour juice off beets. Add celery and mayonnaise. Refrigerate for 1/2 hour. Serve on lettuce leaf or as main dish.
