TOFU CINNAMON OAT MUFFINS | |
1 c. whole wheat flour 1 c. oatmeal 1/4 c. raisins, optional 1/4 c. nuts Mix together in large bowl and set aside. Mix in blender or processor until smooth: 8 oz. soft tufu (comes 16 oz.) 2 eggs 1/4 c. oil 1/2 c. honey 1 - 1 1/2 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking powder 1/4 tsp. baking soda Pour the blended ingredients into the flour mixture. Stir well. Fill oiled muffin tins 2/3 full. Bake at 425 degrees for 12-15 minutes. 12 muffins. |
