CREOLE OKRA 
3 slices bacon, diced or bacon bits
1/2 c. chopped onions
1/2 c. diced green peppers
1 c. sliced okra
1 c. uncooked rice
2 c. chicken or other broth
1 tsp. salt
1/8 tsp. black pepper
Dash of red pepper
1 fresh tomato peeled & chopped

Saute bacon until crisp. Drain all but 1 tablespoon of drippings. Add onion, green pepper and okra. Cook until vegetables are tender-crisp. Stir in rice, broth, and seasonings. Bring to a boil, reduce heat, cover and simmer 15 minutes. Add tomato and fluff lightly. Replace the lid. Allow to stand about 10 minutes. Serves 6.
