CREOLE OKRA 
3 slices bacon, diced
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. sliced okra
1 c. uncooked rice
2 c. chicken broth
1 tsp. salt
1 tsp. chili powder
1/8 tsp. black pepper
Dash of red pepper
1 fresh tomato, peeled and chopped

Saute bacon until crisp. Drain off all but 1 tablespoon drippings. Add onion, green pepper and okra; cook until vegetables are tender crisp. Stir in rice, broth and seasonings. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Add tomatoes and fluff lightly. Replace the lid. Allow to stand about 10 minutes. Serves 6.
