QUICK RICE PUDDING 
1 c. quick cooking rice
1 c. water
3 tbsp. raisins
1/4 tsp. salt
2 c. cold milk
1 (3 3/4 oz.) pkg. vanilla instant pudding
1/8 tsp. nutmeg

Combine rice, water, raisins and salt in a saucepan. Bring to a boil. Cover, remove from heat and let stand until cool. Pour milk into a bowl. Add pudding mix and nutmeg. Beat slowly with rotary beater or at lowest speed on electric mixer. Stir cooled rice into pudding. Spoon into serving dishes. Chill at least 15 minutes.
