QUICK RICE PUDDING 
1 c. rice, cooked
1/2 c. sugar
1/4 tsp. salt
2 tbsp. cornstarch
2 1/4 c. milk
1 lg. egg, beaten
1/2 c. raisins
1 tsp. vanilla

After rice is cooked, add sugar, salt, cornstarch, milk and egg. Cook until thick and creamy; about 15 minutes over medium heat. Add vanilla.
