CONGRI CUBANO 
2 c. white rice
3 c. water
2 c. black beans (Goya)
1 lg. onion, cut into sm. pieces
1 green pepper, cut into sm. pieces
4 cloves garlic or more, cut into sm. pieces
2-3 strips bacon
Cilantro (optional)
Salt

In a pot, fry bacon strips then saute onion, garlic and pepper. When sauteed throw in beans and rice. (Use the bean juice to measure the water content.) Mix together and simmer for about 20 minutes. Delicious!

If you want to use uncooked beans you need let them sit in water until they get soft (approximately 4-5 hours). Then also use the bean juice to prepare the dish.
