PORCUPINE MEAT BALLS 
1 1/2 lbs. lean ground beef
1/2 c. long grain white rice, uncooked
1 tsp. salt
1/2 tsp. ground pepper
1 tsp. dried Italian herb seasoning, crushed
1 tbsp. chopped onion
1 (10 1/2 oz.) can tomato soup
1/2 c. water

Heat oven to 375 degrees. Combine beef, rice, salt, pepper, Italian herb seasoning and onion. Shape into meat balls and place in a 2 quart casserole. Mix soup and water and pour over meat balls. Cover tightly. Bake 45 minutes or until done.
