BETTY'S ISLAND MUSSELS 
1 med. size onion, cut up
3-4 cloves garlic, cut up
1/4 c. oil
1 c. water
2-3 qts. mussels

In small pan saute onions, garlic in oil until tender, 4-5 minutes. Add water and simmer 5 minutes.

Gather mussels, clean, debeard them, scrape off vegetation on the shell. Wash. Place in large pot. Pour onion, garlic, water mixture over the mussels. Cover and steam over medium heat until mussels open.

White wine may be used also.

Serve with broth and French bread cut in small pieces to dip in broth.
