CREAM OF POTATO SOUP 
3-4 med. potatoes, cut in sm. pieces
1 med. onion
1 strip celery
1/2 tsp. salt
1/4 c. butter
4 c. milk
1 tbsp. chopped parsley

Cook in water to cover potatoes, onion, celery and salt until tender. Drain half of the water. Then add butter, milk and simmer gently until hot. Add parsley. Season to taste with salt and pepper. Serve hot with crackers.
