CREAM OF POTATO SOUP 
1 lb. white potatoes
1 tbsp. butter
2 tbsp. chopped onion
1 c. chicken broth
1 1/2 c. milk
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
Pinch of marjoram, crushed
2 tbsp. sliced green onion

Wash, peel and chop the potato. Saute in onion in the butter in a saucepan. Add chicken broth and chopped potato to the onion and simmer until tender. Pour potatoes and onions with the liquid into a blender or food processor. Allow to cool. Place milk, flour, salt, pepper and marjoram in the saucepan, and mix until smooth. Cook over moderately high heat, stirring constantly with a wire whip, until the mixture starts to boil; turn off heat. Blend the potatoes until smooth and add to the hot sauce. Transfer to serving container. Garnish with green onions.
