POTATO SOUP WITH SOUR CREAM 
2 c. potatoes, diced
1 c. boiling water
1 tsp. salt
1 sm. onion, sliced
1/2 tsp. pepper
2 c. sour cream
Minced parsley

Combine potatoes, water, salt, onion and pepper and cook together for 15 minutes. Add sour cream and cook until potatoes are tender. Serve hot. Garnish with parsley. Yield: 6 servings.
