CREAM OF POTATO SOUP | |
3-4 c. raw potatoes, diced 1 onion, minced 1 celery stalk, diced 4 c. boiling water 4 tbsp. butter 3 tbsp. flour 1 tsp. salt 4 c. milk, scalded Cook potatoes, onion and celery about 1 hour. Melt butter, add flour and salt. Add milk and cook until smooth and thick, stirring constantly. Drain potatoes and combine with white sauce. |
