SHRIMP CUCUMBER DIP | |
1 med. unpared cucumber 1 c. cream style cottage cheese 2 tbsp. finely chopped onion 2 tsp. vinegar 1/2 tsp. prepared horseradish 1 (4 1/2 oz.) can shrimp, drained and coarsely chopped Cut cucumber in half lengthwise; remove seeds and discard. Shred enough cucumber to make 1 cup; drain. In small mixer bowl, combine the shredded cucumber, cottage cheese, onion, vinegar and horseradish. Beat smooth. Stir in shrimp. Serve with crackers or raw vegetables. Makes about 2 cups. |
