SKILLET BBQ BEEF 
3 lb. lean roast, any cut
2 tbsp. shortening
2 tsp. salt
1/4 tsp. pepper
8 oz. can tomato sauce
3 onions, sliced
Lemon slices
1/4 c. BBQ Sauce
2 tbsp. brown sugar
1/2 tsp. dry mustard
1 crushed clove garlic
1/2 c. water
2 tbsp. flour

Brown meat (both sides) in shortening in large skillet/Dutch oven. Sprinkle meat with salt and pepper. Add remaining ingredients except for flour and water. Cover and simmer 2-3 hours until meat is tender. Remove to heated platter. Skim fat from drippings and remove onion and lemon slices. Make gravy with flour, water and drippings.

BBQ SAUCE:

1/2 c. vegetable oil
3/4 c. chopped onion
3/4 c. tomato ketchup
3/4 c. water
1/3 c. lemon juice
3 tbsp. sugar
3 tbsp. Worcestershire sauce
2 tsp. salt
1/2 tsp. pepper
3 tbsp. prepared mustard
