EMBUTIDO 
2 lb. ground pork
1/2 c. fresh bread crumbs, soaked in 1/4 c. milk
4 oz. pepperoni, finely chopped
2 eggs, slightly beaten
1/4 c. sweet pickle relish
1/4 tsp. pepper
1 small onion, finely chopped
2 tsp. salt
2 hard-cooked eggs, finely chopped
1 c. shredded cheese
1/4 c. raisins
catsup for dip

You will need plastic wrap and aluminum foil cut into 10 x 12-inch pieces.

Thoroughly combine all ingredients, except catsup. Shape meat mixture into a cylinder and roll plastic wrap around it. Then wrap with the foil, sealing the edges securely. Repeat until mixture is used up. Steam for 1 hour. Let rest 15 minutes before unwrapping. Slice crosswise. Serve with catsup on the side.

Serves 4 to 6.

Note: This can be prepared ahead of time and chilled overnight.
