TROPICAL SNACK 
1 (4 oz.) pkg. sugar-free Jello
3/4 c. boiling water
1/2 c. pineapple juice
1 c. cold skim milk
Ice cubes

Dissolve gelatin in boiling water. Combine juice and ice cubes to make 1 cup. Add to gelatin and stir until ice is completely melted. Add milk-mix. Pour into individual dessert dishes and chill until set. At least 30 minutes. Garnish with coconut, if desired.
