GRATED SWEET POTATO PUDDING | |
4 c. grated raw sweet potatoes 1 c. dark Karo syrup 1 c. evaporated milk 1/2 c. sugar 1/2 c. butter 3 eggs, beaten 1 c. raisins 1/2 tsp. ground cloves 1 1/2 tsp. nutmeg 1 1/2 tsp. cinnamon Melt the butter in a heavy iron skillet or Dutch oven. Mix all ingredients, adding the beaten eggs last. Pour into the hot part with butter; stir until heated. Bake in the skillet at 375 degrees. As a crust forms around the edge and the bottom, stir. Do this several times while baking. Bake 40 minutes. Serve with a cream or lemon sauce. NOTE: Follow method carefully. The crunchy crust gives a flavor similar to candied coconut. |
