TOMATO SALSA 
4 c. tomatoes (about 6 lg.) peeled, cored and chopped
2 c. long green or yellow mild peppers, seeded and chopped
1 c. hot peppers (chili or jalapeno), seeded and chopped
1 c. chopped onion
2 tsp. salt
3 cloves garlic, minced
1 1/2 c. cider vinegar

Combine all ingredients in a large pan. Bring to a boil, reduce heat and simmer for 20 minutes. Pour into hot, sterilized jars, leaving 1/4 inch space. Seal, and process in a boiling water bath for 30 minutes. Makes 6 eight ounce jars.
