TOMATO SALSA 
6 qts. peeled tomatoes, chopped
2 lg. onions, chopped
6 cloves garlic, diced
4 green peppers, chopped
2 jalapeno peppers, chopped (can add more to suit)
8 tbsp. vinegar
1 tsp. basil
1 1/2 tsp. powdered oregano
2 1/2 tsp. cumin
1 1/2 tbsp. salt
1 tbsp. sugar
1 tsp. chili powder
1 tsp. paprika
3 tbsp. cornstarch in 1/4 cup cold water

Chop and dice vegetables. Add vinegar and spices. Cook until peppers and onions are done. Thicken with cornstarch. Put in pint jars. Seal. Water bath 15 minutes. Makes 7 pints.
