B.'S MEXICAN CHICKEN 
1 (2 - 2 1/2 lb.) chicken, stewed & boned
1/2 c. chopped green pepper
2 cans cream of chicken soup
1 can cream of mushroom soup
Grated mild cheddar cheese, enough to cover top
1 bag Doritos, plain
1/2 of sm. onion, chopped
1 tbsp. chili powder
1 tbsp. garlic powder
1 can Ro-tel tomatoes

Butter a large casserole dish and cover bottom with the Doritos which have been dipped in the chicken broth. Next add a layer of chicken cut in bite size pieces. Mix onion, pepper, chili and garlic powder, soups and Ro-tel tomatoes. Pour part of this mixture over the chicken. Repeat with Doritos, chicken and soup mixture. Top with grated cheese and bake for 30 minutes in 350 degree oven.
