MINCEMEAT COOKIES 
1 c. shortening
1 1/2 c. sugar
3 eggs
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/4 c. green tomato mincemeat

Cream shortening, sugar and eggs. Combine dry ingredients and add in. Stir in mincemeat. Drop by teaspoons onto greased baking sheet 2 inches apart. Bake at 375 degrees for 8 to 10 minutes.
