MEXICAN CORNBREAD WITH GROUND
MEAT
 
1 c. yellow cornmeal
2 eggs, beaten
1 c. milk
1/4 c. bacon drippings
1 tsp. baking soda
3/4 tsp. salt
1 (#303) can cream corn

Mix above and set aside.

1 or 1 1/2 lbs. ground beef
1 lg. onion, chopped
1/2 lb. Longhorn cheese, grated
2 or 3 Jalapeno peppers, chopped

Grease a large skillet. Spread a thin layer of ground beef over bottom. Pour 1/2 cornbread batter over meat. Sprinkle cheese over batter; add remaining of meat, onions and peppers. Pour remaining batter over top. Bake at 350 degrees for 50 minutes.
