I substituted almond butter since my husband is allergic to peanuts. I also added 1/2 teaspoon vanilla extract. This really is a quick and easy recipe! So good!

Sceptical at first, but the reviews convinced me. I've had others taste them and although I give them the recipe, some are willing to pay for 2-3 dozen! I'm not the "demand & supply" type though. The only difference between this recipe and the 11 ingredient ones is the amount of batter. This makes 12-16 cookies (depending on size you roll) and the others would make much more if that's whats needed. I've doubled or tripled the recipe when need be and its still less time and effort with the same phenomenal taste.

We always made these growing up but we added vanilla extract. We always remembered it as with every batch it was one of everything. One egg, one cup of sugar, one cup of peanut butter and 1 tsp of vanilla extract and multiple it to however many batches you were making. Only we made them for 8 mins, 10-15 would be too hard or burnt.

These were delicious! I wanted a simple peanut butter cookies for my holiday baking and these totally rocked! I added the recommended vanilla and made them a bit smaller, so they only took 5-7 minutes. I was able to get 5 dozen out of a double recipe.
