GROUPER CASSEROLE 
1 1/2 to 2 lb. grouper filets
2 tsp. minced onion
1 chopped green pepper
2 c. shredded cheddar cheese
3 tsp. butter
3 tsp. flour
2 c. warm milk
1 tsp. salt
1/4 tsp. pepper
1/2 c. wheat germ

Preheat oven to 350 degrees. Blend butter and flour. Stir in milk, salt and pepper. Heat, stirring until thick. Add 1/4 of cheese and stir until melted. Add onion and green pepper. Lower heat and cook.

Grease 2-quart casserole. Sprinkle half of wheat germ in bottom; layer fish, sauce, fish, sauce, etc. Put remaining wheat germ and cheese on top and bake at 350 degrees until done. Serves 4-6.
