TACO CASSEROLE 
1 1/2 lb. ground beef
1/2 tsp. salt
1/4 tsp. pepper
2 (10 oz.) cans chili, without beans, or your own chili
1/4 c. water
10-12 corn or wheat tortillas
Cooking oil
6 oz. shredded Cheddar cheese
1 sm. onion, chopped
1 can black olives, sliced
Sour cream & Guacamole for garnish
Taco seasoning can also be added

Preheat oven to 350 degrees. Brown ground beef with salt and pepper. Add taco seasoning, if desired. Heat cans of chili with water. Fry tortillas in a small skillet in oil until just hot. Place tortillas in a 9 x 13 inch pyrex dish and fill with ground beef, cheese, onion and 1 tablespoon chili. Roll each tortilla up and place seam side down.

Pour remaining chili over top of filled tortillas. Sprinkle with cheese, onion and olives. Cover wand bake for 30 minutes. Serve with sour cream and guacamole. Great with ground turkey, too! Makes 6 servings.
