CARROT CAKE 
2 c. grated carrots
3 c. flour
4 eggs
2 c. sugar
1 1/2 c. oil
1 tsp. baking soda
1 tsp. baking powder
3/4 c. chopped nuts
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. all-spice
1/2 tsp. nutmeg
Other spices of your choice

Mix all ingredients together. Raisins may be added, if desired. Pour into tube pan. Bake at 325 degrees for 1 hour.

Icing: 2 cups powdered sugar and 1/3 cup lemon juice. While cake is still warm, poke holes at 1/2 inch intervals over surface. Mix together icing and pour over cake.
