CARROT CAKE 
1 c. brown sugar
1/2 c. honey
1/8 vegetable oil
3 eggs
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. spice
1/2 tsp. mace
1/2 tsp. cinnamon
1 1/2 c. grated carrots
3/4 c. chopped walnuts
1/2 c. raisins
1 1/2 c. sugar (white) can be added instead of brown sugar and honey.

Sift dry ingredients. Mix sugar, honey and oil add eggs one at a time add dry ingredients. Add carrots and walnuts raisins. Bake in a greased and floured tube pan at 350 degrees for about 60 minutes.
