ORANGE SPICED CARROTS 
3 c. carrots, sliced
1/4 c. orange juice, unsweetened
1 tbsp. butter
1/2 tsp. vanilla
1/4 c. water
1 tsp. orange rind, grated
1/4 tsp. nutmeg
2 tsp. parsley

Combine carrots, water, and orange juice in a saucepan. Cover and simmer 5 to 7 minutes or until carrots are crisp and tender. Add orange rind, butter, nutmeg, and vanilla; stir well. Garnish with parsley.
