PICKLED ONIONS 
Slice onion in 1/2" slices.

Mix: 1 c. water 1 c. vinegar 4 tsp. salt 2 tsp. dill weed, or more if desired

Bring brine to boil and pour hot over sliced onions. Set until cool. Refrigerate and serve when cold. NOTE: Make enough brine to cover the amount of onions you are using.
