CHILLED ORANGE SOUFFLE 
1 env. unflavored gelatin
1/2 c. sugar
1 c. water
1 (6 oz.) can frozen orange juice concentrate, undiluted, thawed
1/2 c. ice water
1/2 c. instnat nonfat dry milk crystals
2 tbsp. lemon juice

Mix together gelatin and 1/4 cup of the sugar in saucepan; stir in 1 cup water. Heat over low heat, stirring constantly until gelatin is dissolved. Remove from heat; stir in juice concentrate. Refrigerate, stirring occasionally until mixture is consistency of unbeaten egg white. While mixture is chilling, pour 1/2 cup ice water into a mixing bowl; add milk crystals. Beat until soft peaks form, 3 to 4 minutes. Add lemon juice. Continue beating until firm peaks form. Gradually add remaining sugar. Fold in gelatin mixture. Pour in bowl; refrigerate until firm.
