CHINESE PEPPER STEAK 
1 lb. round steak
1/2 stick butter
1/2 c. chopped onions
2 lg. green peppers, cut in thin strips
2 tbsp. chopped pimento
1/2 c. celery, cut in sm. pieces
3/4 tsp. salt
1/8 tsp. pepper
1 can concentrated consomme
1 tbsp. cornstarch
2 tbsp. water
2 tbsp. soy sauce
3 c. cooked rice

Cut meat in thin strips. Heat butter in skillet, add meat, fry until richly browned. Add onion and next six ingredients. Cover, cook about 30 minutes or until meat is tender. Blend cornstarch with water and soy sauce, stir into meat mixture, cook uncovered 5 minutes longer. Serve with fluffy hot rice.
