OKRA EVANGELINE 
3/4 lb. fresh okra, sliced
1/2 c. chopped onion
1/2 c. chopped ham
1 c. butter
1 c. cooked rice
Salt and pepper to taste
4 med. size ripe tomatoes

Saute okra, onion and ham in butter until tender. Add rice. Season with salt and pepper, set aside. Slice off stem end of tomatoes and discard. Stuff okra mixture. Bake at 400 degrees for 10 minutes.
