CAJUN CORNBREAD | |
1 c. yellow cornmeal 2 eggs, well beaten 1/2 tsp. baking soda 1 c. milk 3/4 tsp. salt 1 can cream style corn 1/2 c. bacon drippings Mix; let stand. 1 lb. ground beef 1 lg. onion 1/2 c. Cheddar cheese 4 hot peppers, chopped Grease large skillet. Sprinkle in meal and brown. Pour in 1/2 of batter. Sprinkle cheese, then meat, onions, pepper and rest of batter on top. Cook 50 minutes at 300 degrees. "If someone has lost their smile, please be sure and give them one of yours." |
