CAJUN CORNBREAD 
1 lb. hamburger
1 or 2 lg. onions
2 or 3 jalapeno peppers
Salt to taste
1 c. yellow cornmeal
1 c. sweet milk
1/2 tsp. salt
1/2 tsp. baking soda
1/4 c. bacon grease
1 can cream style corn
1/2 lb. cheddar cheese
2 eggs

1. Chop onions and peppers and fry together with hamburger. Set aside.

2. Mix eggs, meal, milk, salt, soda, bacon grease and cream corn; set aside.

3. Grate the cheese; set aside.

4. Grease 10" iron skillet and sprinkle with meal and brown it over medium heat. Pour in 1/2 of batter, sprinkle with 1/2 of cheese. Spread meat mixture then rest of batter and sprinkle rest of cheese. Bake 40 or 50 minutes at 350 degrees.
