2 squares unsweetened chocolate 2 c. all-purpose flour 1 tsp. ground cinnamon 1/4 tsp. salt 1/2 c. shortening 1/2 c. butter 1/2 c. sugar 1/2 c. brown sugar 1 tbsp. instant coffee 1 tsp. water 1 egg 1 1/2 c. semi-sweet chocolate pieces 3 tbsp. shortening Heat the unsweetened chocolate over low heat until melted; cool slightly; set aside. Stir together the flour, cinnamon, and salt; set aside. In a large bowl, beat 1/2 cup shortening and 1/2 cup butter until softened. Add the sugars. Beat until fluffy. Dissolve the coffee in the water. Add the coffee, melted chocolate, and egg to the butter mixture. Beat well. Add the flour mixture. Cover and chill at least 1 hour. Shape into two 7-inch long rolls. Wrap and chill rolls overnight. Cut into 1/4 inch slices. Place slices on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes. Cool on a wire rack. |
