CLASSIC MAYONNAISE 
2 egg yolks or 1 whole egg
2 tbsp. vinegar or lemon juice
1 tsp. sugar
1 tsp. dry mustard
1/2 tsp. salt
Dash cayenne pepper
1 c. vegetable oil

In small mixer bowl beat egg yolks, 1 tablespoon of vinegar or lemon juice, sugar, mustard, salt and cayenne on medium speed until blended. Continue beating, adding 1/4 cup oil, drop by drop. Continue adding remaining oil one tablespoon at a time, while beating. Continue until thoroughly mixed. Chill. Makes about 1 1/4 cups.
