SWEET AND SOUR BRISKET 
1 tbsp. salt
1/2 tsp. pepper
1 garlic clove, minced
1 tbsp. paprika
6 or 7 lbs. beef brisket, well trimmed
1/3 c. brown sugar
2 tbsp. white vinegar
1/2 c. ketchup
1 onion, thinly sliced

Preheat oven to 350 degrees. Combine salt, pepper, garlic and paprika. Rub brisket all over with this mixture and place in roasting pan. Mix brown sugar, vinegar and ketchup and pour over brisket. Place onion slices on top. Cover tightly and bake for about 3 to 3 1/2 hours.
