FRESH BRISKET OF BEEF 
Brisket
1 pkg. onion soup mix
Sliced mushrooms, or 1 can stewed tomatoes or 1 c. catsup

Season brisket with onion soup mix. Cover with aluminum foil. Preheat oven to 300 degrees. Put meat in shallow roasting pan; open aluminum foil a little in the center to form a chimney; cook for 3 1/4 hours. After 3 1/4 hours, open foil wider and add sliced mushrooms, stewed tomatoes or catsup for an additional 1/2 hour. Slice parallel to string.

Note: Most time I add small white onions, red potatoes, celery and garlic and let stew.
