FRESH BEEF BRISKET | |
3 to 3 1/2 lb. beef brisket 8 peeled carrots 3 med. onions, halved 3 stalks celery, cut in 1 inch pieces 4-6 potatoes, peeled and halved 1 tbsp. salt 1/4 tsp. pepper 10 whole cloves Place brisket in Dutch oven and add all ingredients except potatoes. Barely cover with water. Simmer covered for 3-4 hours. Add potatoes last 45 minutes. Slice meat across the grain. Do not try to rush cooking. Long slow cooking makes this cut tender. |
