ROSEY RED RHUBARB CAKE 
BOTTOM LAYER:

1/2 c. shortening
2 c. plain flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1/4 c. brown sugar
1 egg, beaten
3/4 c.milk

TOP LAYER:

6 c. diced rhubarb
1 pkg. strawberry Jello
6 tbsp. butter
1 1/2 c. sugar
1/2 c. flour

Combine dry ingredients and brown sugar. Cut in shortening. Add egg and milk. Mix and spread in bottom of 9x13x2 inch pan. (Will be moist.)

Top clean diced rhubarb. Sprinkle Jello over top of rhubarb. Crumble together butter, sugar and flour and sprinkle on top. Bake 1 hour at 350.
