ROSY RED RHUBARB CAKE | |
2 c. sifted flour 2 1/2 tsp. baking powder 1/4 tsp. salt 1/4 c. brown sugar, packed 1/2 c. shortening 1 egg, slightly beaten 3/4 c. milk 6 c. finely diced rhubarb 1 (3 oz.) pkg. strawberry Jello 1 1/2 c. sugar 1/2 c. flour 6 tbsp. butter Sift 2 cups flour with baking powder and salt. Stir in brown sugar. Cut in shortening until blended. Add egg and milk. Mix thoroughly. Spread in bottom and a little up the sides of 9x13x2 inch pan. Mixture is moist. Top with rhubarb. Sprinkle Jello over rhubarb. Blend sugar and flour. Cut in butter until mixture is crumb-like. Sprinkle over rhubarb. Bake at 350 degrees for 50 minutes. |
