ZUCCHINI PATTIES 
1/2 c. toasted wheat germ
2 tbsp. toasted bran
1/4 c. Romano cheese, freshly grated
1 1/2 c. zucchini, shredded
1/2 c. white potato, boiled and mashed
2 eggs, beaten
1 tsp. fresh oregano, minced
Vegetable salt and freshly ground pepper to taste

Shake wheat germ, bran, and Romano cheese to mix in a plastic bag. In a medium bowl, combine zucchini, potato, eggs, oregano, and salt and pepper. Add wheat germ mixture to zucchini mixture, and combine well. Form 6 hamburger size patties, and arrange on a non-stick baking sheet. Bake in a preheated 425 degree oven for 12-15 minutes until patties are solid and golden brown. Makes 6 patties.
