ZUCCHINI PATTIES 
2 c. shredded zucchini (about 5 med.)
1 c. all-purpose flour
1 c. buttermilk or milk
2 eggs
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh mint or crushed dried mint
2 garlic cloves, minced
1 sm. onion, grated
Salt and pepper to taste
Oil for frying

Drain zucchini and squeeze out excess moisture. Place in large bowl. Stir in flour. Add buttermilk or milk, eggs, parsley, mint, garlic, onion, salt and pepper. Mix well. Pour oil about 1 1/2 inches deep into a large saucepan. Heat to 375 degrees. Carefully drop mixture from a tablespoon into hot oil. Fry, turning frequently, until golden brown on all sides. About 3 minutes. Drain on paper towels. Serve hot or cold. Makes about 12 patties.
