BEEF BURRITOS | |
Makes 8 servings. Here's a nutritional bargain to make whenever you have leftover cheese, beef and refried beans on hand. 2 c. shredded cooked beef 1 c. refried beans (see recipe) 8 flour tortillas (about 10 inches in diameter), warmed 2 c. shredded lettuce 2 med. tomatoes, chopped (about 2 cups) 1 c. shredded Cheddar cheese (4 oz.) Heat beef and refried beans separately. Place about 1/4 cup beef on center of each tortilla. Spoon about 2 tablespoons beans onto beef. Top with 1/4 cup lettuce and about 2 tablespoons each of the tomatoes and cheese. Fold one end of tortilla up about 1 inch over filling. Fold right and left sides over folded end, overlapping. Fold down remaining end. |
