BROCCOLI AND RICE CASSEROLE 
1 c. cooked rice
1/3 c. softened butter
1 1/2 c. American cheese, shredded (save 1/2 c. for top)
1 egg, beaten
1 (10 1/2 oz.) can cream of chicken soup
1/2 c. milk
1 onion, chopped fine
1 (10 oz.) pkg. frozen, chopped broccoli, cooked and drained

Heat oven to 350 degrees.

In a large bowl, mix all ingredients together, except 1/2 cup of American cheese. Spoon mixture into a 1 1/2 quart casserole dish sprayed with Pam. Sprinkle 1/2 cup of cheese on top of mixture in dish. Bake for 45 minutes to 1 hour until cheese is brown. Makes 6 servings.
